Ingredients:
113g chicken breast, diced
1 tsp cajun spice (2g)
4 large slices of tomato
52g cucumber, sliced
71g lettuce, shredded
15g plain, low-fat, greek yoghurt
1 wholewheat or corn tortilla
100g avocado
1 tsp olive oil
Method:
Coat the chicken with cajun spice. Cook in a frying pan until cooked through. Allow to rest for 5 minutes.
Place all the ingredients for the salad in a large bowl and mix well.
Warm the tortilla in the microwave for 15 seconds to make it easier to manage.
Add the salad and chicken to the centre of the tortilla. Fold in the sides, and from one end of the wrap, begin to roll it closed. Use your hands to pack the salad tightly as you roll the tortilla.
Slice down the middle and enjoy.
