Chilli Con Carne

A healthy fibre-rich chilli, great served with bulgur wheat, guacamole and a salsa for added veggie goodness.

Serves 4.

Ingredients:
  • 500g extra lean beef mince 

  • 1 medium onion, diced 

  • 1/2 red pepper, diced 

  • 1-2 level teaspoons of chilli powder. to your taste 

  • 1 red chilli, finely diced 

  • 100g mushrooms, chopped 

  • 2 level tablespoons tomato puree (30 g) 

  • 1 can (400g) chopped tomatoes

  • 1 beef stock cube (6 g) 

  • 100g water 

  • 1 can (400g) red kidney beans, drained and rinsed

  • 1 tablespoon olive oil

Method:
  1. Fry the onion, garlic and beef in the olive oil for 5 mins.

  2. Add in the chilli powder, red chilli, red pepper and mushrooms and cook for another 5 minutes.

  3. Add the tomato puree, chopped tomatoes, stock cube and water and simmer for 15 mins.

  4. Add the kidney beans to warm through.
