A healthy fibre-rich chilli, great served with bulgur wheat, guacamole and a salsa for added veggie goodness.
Serves 4.
Ingredients:
500g extra lean beef mince
1 medium onion, diced
1/2 red pepper, diced
1-2 level teaspoons of chilli powder. to your taste
1 red chilli, finely diced
100g mushrooms, chopped
2 level tablespoons tomato puree (30 g)
1 can (400g) chopped tomatoes
1 beef stock cube (6 g)
100g water
1 can (400g) red kidney beans, drained and rinsed
1 tablespoon olive oil
Method:
Fry the onion, garlic and beef in the olive oil for 5 mins.
Add in the chilli powder, red chilli, red pepper and mushrooms and cook for another 5 minutes.
Add the tomato puree, chopped tomatoes, stock cube and water and simmer for 15 mins.
Add the kidney beans to warm through.
