Chia seeds are tiny yet mighty powerhouses bursting with benefits for heart health (lowering blood pressure and bad cholesterol), digestion and managing weight. They're a great source of fibre, Omega 3 and antioxidants plus magnesium and calcium. And this quick and simple pudding is a healthy sweet treat or delicious breakfast topped with yoghurt, berries, nuts, seeds or, as pictured, with my apple and cinnamon compote.
Serves 2
Ingredients:
230ml milk (any plant-based milk or semi-skimmed dairy)
125g Greek yoghurt (or plant-based yoghurt)
1 teaspoon vanilla extract
65g chia seeds
maple syrup, optional
Method:
Whisk the milk, yoghurt and vanilla extract together
Gradually stir in the chia seeds until evenly distributed without clumps
Leave to thicken for 10 mins stirring occasionally
Pop in the fridge
Add a little maple syrup if you like or top with berries, nuts. seeds and fruit
