Looking for a fresh, healthy alternative to hummus? This edamame bean dip is quick to rustle up, packed with protein, phytoestrogens, good fats, fibre and vitamins - great as a mid afternoon snack with carrots and cucumber.

Serves 6.

Ingredients:
  • 300g defrosted edamame beans

  • 1 tbsp fat free Greek yoghurt

  • 1 small ripe avocado

  • Juice from 1 lime

  • 1 red chilli, chopped

  • Small handful of fresh coriander, chopped.

Method:
  1. Tip the frozen beans into a bowl and pour over boiling water, and leave to stand for 1 minute.

  2. Drain and tip the beans into a food processor with the remaining ingredients.

  3. Blitz until smooth. Season to taste.
