Looking for a fresh, healthy alternative to hummus? This edamame bean dip is quick to rustle up, packed with protein, phytoestrogens, good fats, fibre and vitamins - great as a mid afternoon snack with carrots and cucumber.
Serves 6.
Ingredients:
300g defrosted edamame beans
1 tbsp fat free Greek yoghurt
1 small ripe avocado
Juice from 1 lime
1 red chilli, chopped
Small handful of fresh coriander, chopped.
Method:
Tip the frozen beans into a bowl and pour over boiling water, and leave to stand for 1 minute.
Drain and tip the beans into a food processor with the remaining ingredients.
Blitz until smooth. Season to taste.
