Granola

My simple granola is lighter than many versions. Lightly toasted oats coated in scented coconut oil and maple syrup, with cinnamon, walnuts and pumpkin seeds. If you like to add dried fruit, do this after the granola has baked and cooled. Delicious with greek yoghurt and apple compote, or fresh seasonal berries and seeds.

Ingredients:

70g coconut oil

160ml maple syrup

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

500g jumbo porridge oats

80g walnuts

50g pumpkin seeds

  1. Preheat oven to 160 degrees

  2. Gently melt the coconut oil in a pan with the maple syrup

  3. Add the cinnamon, vanilla, nuts, seeds and oats and stir to coat them evenly

  4. Tip into a baking tray and place in the oven for 30 mins

  5. Leave to cool in the pan and store in an airtight jar
