Granola

My simple granola is lighter than many versions. Lightly toasted oats coated in scented coconut oil and maple syrup, with walnuts and pumpkin seeds. Delicious with greek yoghurt and apple compote, or fresh seasonal berries and seeds.

Ingredients:

100g coconut oil

100ml maple syrup

500g jumbo porridge oats

80g walnuts

50g pumpkin seeds

  1. Preheat oven to 180 degrees

  2. Gently melt the coconut oil in a pan with the maple syrup

  3. Add the oats and stir to coat them evenly

  4. Tip into a baking tray and place in the oven for 25 mins

  5. Pour a teaspoon of maple syrup into the empty pan and add the walnuts and pumpkins seeds and toss to coat before adding them to the oats in the oven to cook for a further 10 mins.

  6. Leave to cool in the pan and store in an airtight jar
