If you prefer a breakfast to grab and go, this nutty granola bar combines health and convenience in every bite. With oats, nuts and seeds, dates and a dash of honey for sweetness, it's a great way to start your day when you're on the move. Keep in an airtight container in the fridge and they'll last up to 10 days.
Makes 10 bars
Ingredients:
Dry
150g oats
120g mixed nuts, finely chopped (walnuts, cashews, almonds - your choice)
80g mixed seeds (pumpkin + sunflower)
20g chia seeds
18g raw cacao powder
2g cinnamon
Pinch of salt
Wet
100g peanut or almond butter (no added sugar)
130g date paste (soak 130g dates in boiled water for 10 mins)
50g honey
1 teaspoon vanilla extract
2 egg whites
Method:
Preheat oven to 170°C. Line a 20 × 20 cm baking tin with parchment paper.
Combine all dry ingredients in a large bowl, ensuring the cacao is evenly distributed
Place the soaked dates (no water) in a food processer and blitz. Add the nut butter, honey and vanilla and blitz again until smooth. Finally add the egg white and blend briefly to incorporate.
Pour the wet ingredients into the dry mix, mix together and press firmly into the prepared pan
Bake for 18–22 minutes, until edges are set and the centre feels firm
Cool completely (at least 1 hour) before slicing.
