This is quite simply the perfect start to an autumn or winter day. Make the apple compote in advance and simply stir through your porridge, topping with greek yoghurt to balance your blood sugar and provide protein to keep you full until lunch. Sprinkle those heart-healthy walnuts over the top for added crunch. The apples provide all the sweetness so there's no need for honey or maple syrup.
Apple compote (5 portions)
6 medium apples, peeled and chopped
1 teaspoon of cinnamon
squeeze of lemon juice, optional
Simmer the apples, cinnamon and lemon gently in a pan until they breakdown
Make the porridge by simmering 50g oats in 300ml water, stirring frequently until cooked. (1 serving)
Pour the porridge into a bowl and stir through the apples and top with 1 heaped tablespoon of greek yoghurt and a sprinkle of walnuts
