Ingredients:
  • 2 medium eggs (88g)

  • 30g spinach

  • 80g sourdough bread or 1 English muffin

Method:
  1. Pop the sourdough bread / muffin in the toaster.

  2. Wilt your fresh spinach in the microwave for 1 minute (no oil needed).

  3. Scramble two medium eggs either in the microwave using no oil or with a spray of olive oil in the pan.
