Gut-friendly kimchi is just the thing to spice up this tasty quick and easy brunch and kick start your day. I use a spicy kimchi - don't be tempted to add too much as it can overpower the other flavours.

Ingredients:
2 medium eggs (88g), beaten
30g spinach
1 medium tomato, diced
30g cabbage kimchi
1 tsp olive oil
Method:
Heat the oil in a small frying pan and add the spinach to wilt slightly.
Add in the beaten eggs, season and sprinkle over the diced tomato.
When the egg is almost cooked, add the kimchi to one half of the omelette.
Flip over and serve!
