A quick and simple, well-balanced lunchtime salad that will keep you full until dinner. This serves two, but double the quantity and save yourself time!
Serves 2.
Ingredients:
200g tinned tuna in brine, drained
120g wholewheat pasta
100g cherry tomatoes, quartered
1/2 cucumber, diced
3 spring onions, finely sliced
Juice of 1 lemon
1 tbsp olive oil
1 tbsp capers
small handful of olives
2 tbsp fresh parsley, chopped
1/2 tsp salt
Method:
Cook the pasta as per the instructions on pack. Once cooked, rinse with cold water until cool.
Place all the remaining ingredients in a large bowl and mix well. Season to taste.
